The moment the thermometre hit -10°C, the Vidal grapes for this Icewine were carefully picked by hand from Niagara-on-the-Lake vineyards. The frozen grapes were then pressed to release the treasured drop of pure extract from each grape. Cool fermentation helped the wine retain fruit concentration and four months of aging in older French and American oak added complexity. The luscious mouthfeel explodes with flavours of papaya, guava, gooseberry and melon. Notes of exotic spice and marmalade linger on the finish, with a final hit of butterscotch, which speaks to the wine's oak aging. This Icewine pairs beautifully with savoury options including paté, foie gras, prosciutto with melon, Thai mango salad, spicy Asian cuisine and Indian curries. After a meal, serve with fruit-based desserts featuring apricots, pears, sweet citrus and tropical fruit. Other delicious dessert pairings include nut-based cakes, Christmas cake and spiced fig cake.
